Honey Blueberry Peanut Butter Oatmeal

This series is all about showing you how to make it right! I used to hear it all the time „I can’t eat oatmeal, it’s so boring!”, „How can you eat oatmeal, it tastes of nothing”… well, it’s because you did it wrong 😋 there you go then, a step-by-step series of how to turn the „boring bowl” into something delicious, flavorful and so yummy. You can’t go wrong now!

 

This one is SO creamy! it’s a remembrance of the summer days; you get that tangy flavour when you hit the berry, then sweet when some honey hits your spoon, and ohhh that crunchy peanut butter. You can’t go wrong with this combo.💛

 

Ingredients:

  • 35 grams of Old Fashioned
  • pinch of salt
  • pinch of cinnamon
  • 1 cup of water
  • 1 tbsp of honey 10 g
  • 10 grams of pea protein
  • 50 ml of coconut milk

Toppings:

  • 70 g banana
  • 10 g peanut butter
  • few blueberries 25 g
  • extra drizzle of honey

Instructions:

  1. In a pot, combine the rolled oats, honey, salt and cinnamon and add 1/3 of the cup of the water to cover the oats. Let it soak in the water for couple of minutes and then put it over the high heat until it boils.
  2. Add another part of water and start stirring well, until the oats start to soften.
  3. Add in a splash of milk and stir. Then add the pea protein powder and the rest of the milk + the remaining 1/3 of a cup of water to reach your desired consistency and continue to cook until the oats are completely soft (about 4 minutes).
  4. Transfer the cooked oatmeal to a bowl.
  5. Top the oatmeal with sliced banana, peanut butter, and blueberries and finish off with a drizzle of honey for extra sweetness.
  6. Serve warm!
